The nail that sticks out gets the hammer. Galland definitely put a spotlight on those particular traits though. I just couldn't get on with the rocket types - I found the ammo was too limited to provide consistent support fire. that is why I liked the 15cm. The largest calibre to offer soft support. the AT support I see as more a bonus and it does come in handy. Even though they don't do much damage to later...

In my playthrough, the rivers hadn't been frozen over at first, but froze very quickly, like turn 2–4, which is a big boon for the German player, actually, because it becomes easier to bypass or flank enemy defences with your relief force. Actually I never really gave much thought to strategic bombers. In pc1 they were my ship killers and helpful giving persistent suppression. And like you said, that second part is no longer unique! And anti shipping was only really useful in Sealion. Strat bombers were one of my top favourite classe...

Agreed on Karl/Gustav, restricting their efficiency to structures would make sense — both historically, and in terms of them not being a magic wand that just sweeps all your problems away (especially in combination with the 2x attack/2x fire rate heroes).
