Great questions Chad and there will be no right or wrong answers. The generic answer is 'what is your army design trying to achieve?' Some lists lend themselves to an ally with just 1 BG. For example when I used Ottoman Turks in V2 I had an IC with the main army but a Serb Ally TC who only had 1 BG ...

Mounted cannot take a fortified camp. Foot on a 5 or 6. Quality re-rolls apply
Elephants can take a fortified camp. The foot must be battle troops - not skirmishers. And camps must be charged in the impact phase, or pursued into, - moving into contact in the movement phase is no longer an option.

I have Aztecs who have also morphed into Mayans. Have done reasonably well with them but as per history they can't cope with cavalry / knights.

Just awaiting the R&R to see how embarrassed they are going to be at Warfare but they were a labour of love and deserve to get out of the box now and again.

That's a great question. We've just had a 5 game competition using 60" x 40" and we kept the deployment areas the same. This was sightly concerning when a LH BG deployed just 4MU away from my LF. For a 36" deep table I suggest you drop skirmisher deployment to 15" but there is no established convent...
