Would a fantasy mod be at all possible?

The answer is that anything is possible, it just depends on your scripting and 3-D modelling ability.

I'd like something like The WItcher fantasy rather than D&D style or Warhammer. Or how about Game of Thrones!

Maybe wait for medieval units to be produced by the devs first.

Indeed fantasy armies are a mix between dark ages and middle ages; for example if you are considering horse people like Rohan, thay are more like avars, lombards and similar; however if you are considering Warhammer empire they might be considered as renaissance empire or maybe burgundian, but orcs might be more like german foot tribes or horse tribes (for orc mountend on boar or wolves)

So yes i would wait a "storm of arrows" dlc but there is something interesting in age of belisarius too :D
