This gives details of a number of battles from the 6th to the 12th Centuries.
"Byzantium and its Army 284 – 1081" by Warren Treadgold and "Shadows In the Desert" by Dr Kaveh Farrokh are all good sources on the Byzantine and Sassanian armies.
